Once it’s all assembled, it is a bright green color with a light creamy topping. In my opinion, it is the topping that really brings this whole dish together and makes it uniquely delicious. The topping is Dream Whip mixed with a cooked egg and flour mixture. The gelatin layer has pineapple, bananas, pecans, and marshmallows mixed into lime jello for a sweet and tart treat. While there is convenience in mixing everything together, I think the layered version looks quite impressive on the holiday party table. Some, like this recipe, have a cooked topping. Some have cream cheese or mayonnaise mixed in with the Jello. If you search the internet, you will notice that there are several versions of 7-Up Salad. Yet, in the magical way of those vintage Jell-o salads, you can serve it as a side dish along with the meal or as a dessert afterwards! And yes, while it is called a “salad,” this is a sweet dish that is more of a dessert. They did not disappoint! I found this 7-Up Salad recipe and knew we had to give it a try! Since this particular one wasn’t in Granny’s recipe box, I turned to my church cookbooks. This past Christmas, my adult children found out about 7-Up Salad from their dad’s side of the family and were curious about the recipe. It was always one of her favorites and she still makes it regularly to this day. My mom didn’t make 7-up salad (likely because we didn’t keep sodas in the house) but she did make a lime jello salad that was very similar. Jell-O salads were a thing back when I was growing up in the 60’s and 70’s. It’s a vintage no-bake jello dessert recipe that’s perfect for holidays. Remove the center piece of the mold and the jello will release from the mold onto the plate. Next I inverted the mold onto a serving plate. Just before dinner was served I removed the lid. The good thing about this mold is that it can be prepared a day ahead. Leave it to set for a couple of hours at least. Now I put the lid on and returned it to the fridge. ![]() I sprayed the jello mold with cooking spray before I scraped in the Cool Whip mixture. I used a rubber spatula to fold the Cool Whip into the jello. I then set the bowl in the fridge for about an hour and 20 minutes until it was almost set.Īfter removing it from the fridge I added a tub of Cool Whip to the bowl. Next I dumped the mandarin orange pieces into the jello. Using a sharp knife I cut the segments into smaller sections right inside the can. Now I opened up a can of mandarin orange segments and drained off the liquid. I then poured in 2 cups of boiling water and stirred until all the jello powder dissolved.
